Vegan Taco Night!

Vegan Taco Night

We have had taco night once a week since . . . a long time.  Actually it started as a “mexican night” and we would have quesadilla, tortilla soup, this awesome chilequeleas dinner–so yummy.  When I lived in Texas for two years our local Whole Foods had cooking classes and demonstrations a few times a month and I rarely missed one.  I learned how to make authentic regional food–it was way too cool and so yummy.  More often than not it was just a few of us in the class so I could ask lots and lots of questions.  It was like having my own private cooking instructor.

As the kids grew, so did their desire to try new things–taco night is the perfect way to try new things.  Sprinkle in the new with the familiar.

The Recipe

Part One:

  • apples
  • a touch of brown sugar
  • spices (I used mace, cinnamon, cardamon)

Part Two:

  • 1 cup flour
  • 3/4 cup brown sugar
  • 1/2 cup muesli (but you don’t need to add that–I just love it)
  • 1 teaspoon baking poser
  • 1/2 teaspoon salt
  • 1/3 olive oil

Add all of part one in a bowl.  Add all of part two in another bowl.  Add part two over part one, bake at 350 for 45 minutes.

 Plant Based Nutrition Recommendations

  •  If you can’t find fresh use frozen peppers, onions and carrots.  In this recipe I used frozen corn on the cob and bagged corn.
  • Add different seasonings.  Chipolte, Curry, Lemon Liquor all would be really good.
  • Use pre made hash browns to thicken the soup.
  • Serve as a side dish with vegan tacos.
