I have a cabin!

Nothing fancy–a garage kit from Sears.  My dad built the cabin with his own hands–I look at each plank of knotty pine knowing that he touched it!  My dad died when I was 7 . . . when I sit in the cabin–I can almost feel his energy, feel the love, sweat and tears that he poured into the project.  For me the cabin is a very special place.

For everyone else the cabin is a place to go boating, kayaking, swimming, fishing and playing at the beach.  Planning meals is easy because we keep our meals easy.  

This is a blog post I wrote on my phone as I was experimenting with food journaling.  A look back into Renee’s Kitchen before it was officially Renee’s Kitchen!

Welcome to my Cabin Kitchen!

On the menu for today are: eggs, pasta with red sauce, and tacos.

The eggs can be an omelet with mushrooms, onions, red pepper and kielbasa or Mexican eggs with the taco meat. Or *gasp* plain eggs with toast!

The taco meat is not that interesting but my brother (who is with us this week with his 3 boys) bought some interesting tortilla wraps. The taco lunch will be served with all the typical fix in’s.

For dinner we will have pasta with red sauce or just pasta with cheese–depending on the kid :-). I’ll make a spinach salad with the leftover veggies from breakfast–an olive oil, apple cider vinegar, hunk of smashed garlic, and a squeeze of mustard.

Our snacks have been oranges, watermelon, grapes and apples–I tried to pick juicy fruits to rehydrate–from raking leaves, bagging leaves, beach time, fishing, kayaking, archery, and several games of good old fashioned tag.

I love the idea of cooking in the cabin my dad built on the old pink Club pans I inherited from my Aunt Clara (read more about her in my apple sauce post).

I’m blessed to have wonderful meals shared with my family.
