#1 Fun Summer Secret to Stay Hydrated

ARE YOU READY FOR SUMMER?mason jar

This my be my shortest post ever!

I found these awesome lids that fit on my mason jars.  I’ve been looking for something like this and toyed around with the idea of making my own but . . . since I have trouble just keeping delicious, healthy food on the table–I opted to just buy lids when I saw them.

If you follow me on Instagram you already know that I found them at Target yesterday!  I was so excited I just had to share my “big find”.

Why do I love them?

1.)  I love drinking out of glass.  After 10 years of having plastic bowls, plates and cups–I ditched it all to use my “non-kid” dishes.  I was sad to see the Bob the Builder cups go (the Dora plates I gladly put in the Goodwill box!  I was never a Dora fan but the kids loved her.) and the plates that had different sections.  I loved those.  Those plastic plates never seemed to dry in the dishwasher leaving me with a counter cluttered with cartoon characters.

2.)  When I’m not canning–the jars can be used year around vs. just collecting dust in the basement.

3.)  Mason jars are really durable.  I’ve never had a kid break one.  (watch today will be the day right after I publish this post.)

4.)  They make a table look rustic and homey. masonjar2

5.)  Hot and cold beverages can be put in them–what I have discovered is that if you can’t hold the jar–then it is too hot to drink.

6.)  Lemon, mint, limes, sprigs of thyme look beautiful in a glass jar.

Pomegranate Seeds 101

What is not to love about pomegranate seeds?

The color is beautiful–like gems.  They are sweet and crunchy at the same time . . . just like me!  Ok, I’ll be honest–I’m feeling a little goofy today.

But Pomegranates are messy and stain! pom1

Well, yes, I guess it can be messy and it does stain–if you have the juice.  The actual seeds aren’t too bad.  I use pomegranate seeds in smoothies, on salads and I make a fantastic pomegranate salad dressing.  I typically buy them at the store just because the package costs the same as buying the pomegranate.

Not this time

My store was out of stock but they did have pomegranates so . . . I bought one.  Then I thought of my readers, did they know how to de seed a pomegranate?  And now we are here!  (I think about you guys all the time as I’m spending time in my kitchen creating simple meals with just a touch of something new and fun–because breakfast, lunch and dinner can get sort of monotonous.)

I learn by watching and think most people do–especially when it comes to cooking!  This is a quick video just 3 minutes.  Those of you who know me or have watched my vids before know that I get sidetracked easily.  This video I stayed on topic, was photo bombed by my 6-year-old while the 8-year-old was filming AND I had a guy cutting tile in my garage.  For the record, I did know the guy in my garage–it isn’t like I have random folks working in my garage.  (But if a random person wanted to come dust . . . ).

Pine Nut Pesto #veganhack

What is #Vegan Hack?

#Vegan Hack is when I take a recipe that I loved as a non-vegan and veganize it.  Why bother?  I’m working on a little book that explains my decision to eat a vegan diet.  But until then . . .

veganpineutpesto500

[yumprint-recipe id=’9′]A couple tips–make sure the olive oil covers the basil/pine nut mixture–otherwise it goes all gunky and gross.  I also switch out different kinds of nuts, herbs and olive oils depending on what I have or is in season.  In this recipe I made pesto out of garlic snapes.
