Lent, already?

I can’t believe that this Wednesday is Ash Wednesday!  How did this happen?  I get it–I really do understand how time keeps marching on but . . . I don’t always feel a sense of accomplishment that comes with time marching on.

I digress.

So these are my Meatless Lenten Meals.

  1. Pasta (or Polenta made in the rice cooker) with Red Sauce with veggies, garlic bread and salad.
  2. Homemade Pizza–I have the kids make their own pizza–that way they get the veggies they enjoy.
  3. Meatless Chili–this is really bean soup–I make it like a traditional chili or use black beans and sweet potatoes.
  4. Breakfast for dinner–French Toast Bake, Quiche, or scrabbled eggs/hashbrowns, pancakes with fruit.
  5. Baked Potato Bar–sour cream, leftover meatless chili, cheese, broccoli, roasted veggies.
  6. Tacos with refried beans, tomatoes, cheese, lettuce with rice.
  7. Macaroni and Cheese in the crockpot.
  8. Soup in a mini bread bowl (roll)–I made my recipe for chicken pot pie and serve it in a roll–it can be from the deli or the frozen type–I’ve used both with success.

      Sheila,
      We eat meat a few times a week–so for us not eating meat during Lent is really just switching around our menu. I few of my friends eat meat everyday, eat frozen dinners, order take out–I had them in mind when I wrote this post. Several of them have asked for suggestions . . .

    I am not Catholic, but I like meatless recipes. I am not vegetarian, but I don’t desire lots of meat or even meat everyday. Something I enjoy are oatmeal burgers. I like roasting veggies as well. I guess meatless spaghetti is a good ol’ stand by.

      I found out last year that many religions refrain from eating meat during the Lenten season . . . I found that to be interesting and wanted to research it further . . . but the desire to learn more was not as great as “who knows what” because I never followed through.

      Maybe some one who has a knowledge base on this will respond here in the topics–

    This is a great list! We also do protein smoothies–almond milk or kefir, PB, hemp seeds, dates, etc–especially for breakfast or lunch.

    And I’m with you….where did the time go??? We’re back to Lent already????

      those are great ideas! I never think of making a smoothie–I have one kid who loves them but it just falls of the radar.

      Barb–will he eat fish? I often make shrimp tacos or cook salmon–and 4/6 eat the dinner! I also like butternut squash ravioli with roasted walnuts and a brown butter sauce or cream sauce . . . caramelized onions–that is a filling meal!

    I put together some fish seasoning so I could just sprinkle that on fish for a quick meal. We also like meatless pizza, the kids love spaghetti, homemade mac & cheese, and I’ve seen a shrimp soup recipe floating around that I want to try out. Have a blessed Lent!

    Those are all great meals! We eat a low-meat diet all the time, so Lent is not much of a change. I have a lot of recipes and multi-week menus on my site.

    One option you didn’t list is lentil dishes. I like lentils because they’re as cheap and healthy as other dry beans but much faster to cook. Our standby really easy lentil recipe is Honey Baked Lentils, delicious with sweet potatoes or squash which can bake alongside.

      Thanks so much for reminding me about lentils! I ate before I had kids . . . now they aren’t really a fan–but I do sneak them into soups and curries!
