Oatmeal 101: a Blab Cooking Show

Oatmeal 101

Do you know I do a cooking show?

I do and it is pretty cool.  Just me and my friend Chef Dennis–he is in Florida and I’m in Illinois–we meet up on a live streaming platform called Blab.  Since I AM my own production team–hair, wardrobe, make up (let’s be honest here–I brush my hair, slap on some lip gloss and pick out an apron, nothing tricky) BUT the tech part of it is a huge challenge for me.  On Blab you can be in the test zone–this is a place where I do a sound check, lighting and see what my cameras have in the back ground.  (this is crucial because I don’t clean my entire kitchen!!!!)

I was in the test zone for this blab and a guy came on and asked me all kinds of questions about oatmeal.  It was awesome!  He received  one on one food  coaching and I worked out a few glitches in my presentation about oatmeal.  His first question was . . .

Why a Show on Oatmeal?

He went on saying that oatmeal was boring and he didn’t understand why anyone would want to eat it.  I laughed because I get that a lot!  More than what you might know.  Oatmeal is tasteless and boring.  If you feel this way, please change your mindset.  Watch this show and afterwards I invite you to make boring oatmeal!

A super fun show on oatmeal!

My favorites

I have two.  One is Bob’s Red Mill–all of the oatmeals are wonderful but one in particular stands out for me Muesli and I combine that with a local stone cut oatmeal from Baker Miller.  The combination of the nuts and berries of the muesli with the earthy chewiness of the stone cut oats is a perfect combination for me.  Did I mention that it cooks in about 5 minutes?

Plant Based Nutrition Recommendations

  • try out a few types of oatmeal, they are different in texture and flavor
  • add some super fun toppings
  • commit to having oatmeal once a week
  • remember you can easily make a double batch and reheat in the microwave (I do this all the time)
  • google oatmeal and your health concern–be proactive in your health care

French Toast Sticks (Dairy Free)

French Toast Sticks!

Dairy Free French Toast Sticks were a hit on Instagram this week!  This recipe is not vegan.  I tried to make it vegan and it didn’t work.  I was a bit bummed.  I was also not thrilled with how they turned out . . . but my kids assured me that they were perfect!  I didn’t add powdered sugar but I thought about it.  What bugged me was the inconsistent coloring . . . I know, I know–who gives a shizzle?  But I do.  I like things a certain way.  Next time I will cook them on the griddle and see how they look!

The Recipe (such that it is . . . I don’t really like recipes.)

  1. cut a stack of bread into 4 pieces.
  2. crack 3 eggs in a bowl, whisk.  add almond milk until the mixture is less yellow and more white–that is the perfect “wash” for the bread.  If you are using eggs and milk it is the same thing–add the milk until the mixture isn’t yellow.
  3. add the bread to the mixture one slice at a time, turning to coat them.
  4. place the “sticks” into the hot oiled/buttered/earth balanced pan–same temp as for pancakes.
  5. enjoy!

Don’t Forget

This is a great make ahead meal AND a great lunch meal.  I have also frozen them for traveling or for breakfast.  I play around with different breads . . .

Muffins! 1 mix-4 happy kids

Muffins for Breakfast!

I want to make all my kids happy at once–making muffins is not the best way!  One likes the strudel topping, one kid doesn’t, one kid likes the blueberries in the mix, one kid wants chocolate chips!  What’s a mom to do?

One mix–4 different muffins!

I use Simply Mornings from Duncan Hines.  I’m not married to the brand, it is what I can find at my Target (sometimes).  (I live in a food desert.)  What I like is the “natural” ingredients–I can pronounce almost everything.

Keep in mind–this is NOT health food.  It is basically a donut.  But it does have several redeeming qualities!

  • no milk!  If you don’t know why I don’t like milk–read about it here.
  • makes everyone happy
  • makes the house smell awesome!  I could buy muffins but waking up to the smell of warm, chocolate and blueberry-ness is a wonderful thing.
  • gets the kids thinking about breakfast in a new way–not the same bowl of cereal.
  • lets the kids know that I try to make them all happy (points in the mommy bank!)
  • they get to see how creative I can be with one box of muffin mix.  I want to model creativity, DIY, frugalness and playfulness.
