Vegan Taco Night!

Vegan Taco Night

We have had taco night once a week since . . . a long time.  Actually it started as a “mexican night” and we would have quesadilla, tortilla soup, this awesome chilequeleas dinner–so yummy.  When I lived in Texas for two years our local Whole Foods had cooking classes and demonstrations a few times a month and I rarely missed one.  I learned how to make authentic regional food–it was way too cool and so yummy.  More often than not it was just a few of us in the class so I could ask lots and lots of questions.  It was like having my own private cooking instructor.

As the kids grew, so did their desire to try new things–taco night is the perfect way to try new things.  Sprinkle in the new with the familiar.

 Plant Based Nutrition Recommendations

  • make fun fresh salsas out of apples, pineapple, heirloom tomatoes, or jicama
  • try a taco salad for lunch–and the heaviest ingredients on the bottom and the lettuce on tip
  • play around with different faux meats OR just use a variety of beans
  • get the kids involved in cutting, mixing, making the dinner
  • have a build your own taco bar
  • use the leftovers to make enchiladas (freezable meal)

My favorite vegan!

I met Gene Baur!  We chatted . . .

Gene is:

  • compassionate and super nice.  The real deal!  He had a huge line of people for his book signing . . . he spoke with each one, posed for pictures and listened.  It is clear that he LOVES what he does!
  • passionate and smart.  Gene did not speak in hyperbole, rather he spoke of facts and how we can make simple changes to create a huge impact.
  • a thought leader.  “Impossible to live without harm but it is possible to be conscious.”  Focus on health, healing, transformation and trying to do better.” and my favorite quote is “show up.”  Powerful!

I have read both of Gene’s books, Living the Farm Sanctuary Life: The Ultimate Guide to Eating Mindfully, Living Longer, and Feeling Better Every Day and
Farm Sanctuary: Changing Hearts and Minds About Animals and Food.  I highly recommend reading them–they are uplifting, encouraging, offer positive steps towards a more mindful way of looking at your food, animals and the environment.

Jon Stewart’s interview with Gene Baur is a quick intro to mindful eating!  They speak about how a vegan diet can help the environment, the animals and our own well being.  “We are a passionate group!”

Superfoods Vegan Breakfast 001

Breakfast and Instagram

I love being blessed by a new day!  Waking up filled with joy of the endless possibilities.  (yeah, seriously I wonder about myself sometimes!)  But that really is how I feel.  Each morning I have a conversation with myself that goes like this:

  • how can I honor and love myself (to be honest this is a new one for me, in 2015 I’m putting myself first.)
  • how can I serve my family to help them be the person God wants them to be
  • please let me be love and light
  • when I fail (often before breakfast) what is the quickest way to get back on track.

Filling up on Compassion

For me, eating a vegan breakfast begins my day without bringing harm to any animals.  I like to start everyday with that practice or intention of loving kindness.  This breakfast is a yummy, yummy way to be compassionate.  I wish all compassion was flavored with chocolate–wouldn’t the world just be happier?

P.S.  This necklace is the one I wear everyday.  “I am love” is a wonderful reminder of how I want to greet each moment.  I’ve created several different variations for women who feel the same way but have different words to express the same sentiment.
