Oh, my goodness! Chia see pudding is my favorite. I have to admit, when I first saw the email tagline, I thought, “is Renee crazy? Pudding for breakfast?” You got me on this one. I use coconut milk. Either way, it’s easy, healthy, and tasty.
Shelley, I do feel crazy sometimes! I will try coconut milk–I’ve noticed that the different seeds yield a different pudding. I’ve had a wonderful time experimenting with this recipe.
Looks and reads wonderful! I love chia seeds and often eat them with yogurt and in smoothies, which I often put in the refrigerator where by next morning thicken and resemble puddings. I will try this one as soon as my hubby buys some almond milk or coconut as Shelley said.
