Mango Salsa

 Recipe for Cuban Inspired Mango Salsa

  • mango (I buy mine at trader joe’s already cut up)
  • cane sugar
  • lime (for  the juice)
  • lime zest
  • green herbs
  • apple cider vinegar

Cuban seasonings have the same common elements–sugar, lime, vinegar . . . they take it from that point and make it your own.  So many options with different sugars and vinegars the possibilities are endlessly yummy.  I mean how can you really go wrong?

Directions

Mix the sugar, vinegar, lime juice, lime zest and herbs together first, then add the mango.  Let it sit for a few hours or over night in the fridge to let the sugars work magic with the mango making a sweet and zesty salsa.  You can not rush love or making salsa.  Give it time.

Plant Based Nutrition Recommendations

  • Add strawberries
  • Add pineapple
  • Play around with adding a little heat with different peppers
  • Play around with adding cilantro, dill, mint (I love mint!)
