French Toast Bake (Iron Chef Mom: Eggs)

I’m thinking it had to be more than 20 years ago when I walked into Great Harvest Bakery on S. Main in Ann Arbor, MI.  I worked at the other end of the “mall” in the deli of a grocery store.  Glamorous no–on the verge of poor yes . . . but I was never hungry.  (and my friend Ken supplied me with as many lattes as I could drink!)  Oh, how I ramble . . . when I walked into Great Harvest it smelled like home.  When I was growing up it was my job to make the bread each week–5 loaves.  I still have a love/hate relationship with bread . . .

Great Harvest had bread, butter, jams and jellies . . . and recipes.  I love recipes–but I don’t collect them exactly.  I make them and if I like it . . . I keep it–if I don’t–the recipe goes.  This is the Great Harvest French Bread Recipe.

One more quick story–when we lived in Michigan, I made French Toast Bake often.  I loved making it for my nephews.  But then we moved . . . no Great Harvest here.  I painfully tried different breads . . . nothing compared.  So that last time I was in Michigan–I ordered 20 loaves of bread.  I didn’t really realize how much room that would take up in an already full van or how much room it would take up in the freezer.  Opps.  I make FTB once a month now . . . and that is the best Sunday morning of the month.

This recipe is from Great Harvest Bread Company call them at 734-996-8890 if you want to order bread–they will send it!  Click here for the website and more recipes!  Had I known . . . it would have been a much different trip home.

[recipe]1 loaf Farmhouse white or cinnamon crunch bread (10 cups of bread)

8 eggs

3 cups of milk

4 tsp sugar

1 tsp vanilla

3/4 tsp salt

Topping:

2 T. butter cubed

2 T. sugar

2 tsp cinnamon

Place bread cubes in a grease 13×9 baking dish.  In a mixing bowl, beat eggs, milk, sugar, vanilla and salt.  Pour over bread.

Cover and refrigerate for 8 hours or overnight.  Remove from the refrigerator 30 minutes before baking.

Dot with butter.  Mix sugar/cinnamon mix and sprinkle over the top.

Cover and bake at 350 for 1 hour.  I uncover for the last 15 minutes to make a crunchy top.

Organic tips:  this recipe can be completely organic.

Dairy free:  I have substituted Almond milk.  I liked it the kids did notice a difference.

Frugal tips:  Save the bag from the loaf of bread and use it to cover during the 8 hours.  I use old bread bags for plastic wrap.  My grocery store has organic eggs and organic milk 50% off.

Heart Food (Ultimate Recipe Swap)

First thing out of my 5 yo on Valentine’s Day morning was–can we have heart shaped pancakes?

Then the next kid comes into my room and asks, “how are you going to make this Valentine’s Day special Mom?”

Then the other kids chime in with so many ideas that I couldn’t possibly do them all in one day . . . because I already had a plan!

  1. To serve chocolate croissants for breakfast.
  2. To make heart shaped pancakes for lunch.
  3. To make whoopie pies for dinner AND heart shaped mini cheesecakes!
  4. To have a salad with raspberry dressing (we ended up not eating the salad but had it today for lunch.)
  5. To make meatloaf in a heart shaped pan with mashed potatoes and gravy!
  6. To make heart shaped breadsticks.
  7. To shower everyone with encouraging words all through the day–
  8. To text my husband oxox a few times.

IMG_2062It was a great day!  I think everyone felt love in their own special way.  I realized how bless I really am.  I found joy in the simple things.  I slowed down enough to see, feel, and process how I felt and rejoiced in knowing that they felt loved.

My heart sang!

Fun Food Fact Friday (F4)–Pineapple

Welcome to my First Fun Food Fact Friday!  Wow that is a lot of F-words!  Maybe I should have made my First FFFF (F4) be figs!  Making today a FFFFFF or F6!  I love numbers and patterns.

What is F4?  It is my day to let my science geek girl shine AND my research writer glow AND my culinary artist side create AND (finally) my food coach cheer.  

Did you have home economics in school?  I did!  I had more detentions because of home economics than any other class.  (I would like to formally apologize to my teachers for being a difficult student.)  One detention was given for pineapple unit.  We were asked to make jello using pineapple and I didn’t–I refused.  I made my jello with pineapple on the side.  Why?

Well, pineapple has bromelian an enzyme that breaks down protein chains.  Jell-O is made out of gelatin, a processed version of protein, which is made out of . . . animal products!  

If you want to read about the where and what of the animal products go here.  I learned something new today!  Jello-O is not vegan.

  • pineapple is a natural tenderizer for meat BUT the sap of a pineapple plant contains huge amounts of bromelian as a defense mechanism causing pain if eaten.
  • pineapple is a natural anti-inflammatory so it might help alleviate pain from a sports injury, sinus issues, and digestive issues.
  • pineapple is very high in manganese (helps strong bones and helps build collagen–if it prevents wrinkles–I’ll take a bath in it!)
  • pineapple is high in Vitamin C

Pineapple Recipes!

I created a video about how to cut a pineapple.  I create these videos so that you can see what I’m doing–not because I do it the best way but my viewers can really get a sense of how juicy a pineapple is, how hard it is to cut through (I do try not to grunt when I make these videos but I almost did in this one!) and how simple it really is.

You know what is so great about pineapple?  you can add it to anything and make dinner special–steamed rice with chunks of pineapple is awesome!  Add it to your next smoothie or even better you can juice it!  I just did a video on juicing . . . coming soon.
