I love celery flavor but I don’t always want it in my soup . . . I want the essence of the subtle flavor without the bits!  (I sound like my kids “does it have bits?”)

A blast from the past!

I’ve been blogging for over 5 years now!  I can’t believe it.  This is a very old post . . . my old camera, my hesitation to share my love of cooking, and being so clueless on how to have a blog that inspires!  Enjoy the walk down memory lane.  (and make some apple sauce–so insanely simple, so good for you and no sugar.)

One of my ideas for 1012 is to share one crock pot recipe a week.  I found a great deal on organic apples and thought that I would buy 15 pounds.  My first batch of applesauce is 5 lbs of apples cut into chunks with just enough water to cover the bottom of the crock pot.
 
 
 
 
 

All of those apples cooked down to this amount.  I added cinnamon once they were finished cooking.  During the cooking process I stirred the apples and they broke into chunky pieces and I sort of like that.  The kids love it.

I plan to freeze the rest of this recipe and the other 10 pounds of apples bound for sauce.

Thank you God for Aunt Clara Broda who made applesauce for me as a kid.  It amazes me how you intertwine people, ideas, and outcomes.

My favorite vegan!

I met Gene Baur!  We chatted . . . 

Gene is:

  • compassionate and super nice.  The real deal!  He had a huge line of people for his book signing . . . he spoke with each one, posed for pictures and listened.  It is clear that he LOVES what he does!
  • passionate and smart.  Gene did not speak in hyperbole, rather he spoke of facts and how we can make simple changes to create a huge impact.
  • a thought leader.  “Impossible to live without harm but it is possible to be conscious.”  Focus on health, healing, transformation and trying to do better.” and my favorite quote is “show up.”  Powerful! 

 I have read both of Gene’s books, Living the Farm Sanctuary Life: The Ultimate Guide to Eating Mindfully, Living Longer, and Feeling Better Every Day and 
 Farm Sanctuary: Changing Hearts and Minds About Animals and Food.  I highly recommend reading them–they are uplifting, encouraging, offer positive steps towards a more mindful way of looking at your food, animals and the environment.
