Food School: a 31 day course (day 11–CSA box)

My CSA box came and this is what is in it!  (see video below) I’m so excited to create a new and exciting menu from these simple foods.  I love to create . . .  in the kitchen.

On the menu this week will be:

  1. Vegan Broccoli Soup
  2. Vegan Stir Fry with Chicken on the side for my Non-Vegan family
  3. Spinach Lasagna–not sure how to make this–I think most pasta is Vegan?
  4. Cinnamon Gnocchi  for my little guy–I will alter the original recipe to use Earth Balance so that will be Vegan too!
  5. Kale smoothie–I’m not a huge smoothie fan but I need to make it and drink it so that I can add it to the cookbook Blessed by Breakfast!

So this is what is in my box this week!

Tomorrow is our local farmer’s market where I will pick up some extra veggies–potatoes, peppers and maybe some herbs–I think I have some basil eating rabbits passing through my yard!  I want to make up a yummy basil infused olive oil for my salads.

      Hi Becky,

      My CSA is almost continuous for 42 weeks! I’m so lucky :-) At this point I have enough from the CSA to cook 2 meals for 6 people–so next year I might increase my size. I’ve become better at figuring out how to freeze spinach and kale, so I waste less!
