This printable infographic by Kris Carr is awesome.  We eat tons of these.  I buy mostly  canned–but with this cheat sheet I will make a greater effort to by them dried.  Can you guess what I’m talking about?

#3 My workout buddy!

Ok, so Rich Roll doesn’t really know that he is my workout buddy.  What he has done is create awesome podcasts about plant-based foods, nutrition, exercise, and how to change the world by how you live your life. Which is exactly what I want to do.   I’ve been working out since the beginning of January 2014 and I’ve lost 7  pounds!  Yeah for me!  I have a long way to go but I have a plan–4 days a week for 60 minutes on the elliptical (I’ve had to work up to this).  My workout burns over 700 calories and gives me a huge energy boost.  Thanks Rich my workouts enjoyable!

#4 Do you eat beets?

No?  I love beets and think everyone should too!  Sorry, the 6-year-old with uncontrollable excitement that lives with me just came bursting out!  Beets are a food I am CRAZY excited about.  I love growing beet greens for the turtles.  I think they are awesome roasted.  I juice them twice a week with lemon, apple, and ginger–amazingly good and the color is phenomenal.  (See what I mean–I’m a little nutty when it comes to beets.)  Here is a post by my friend Kristy–she is an amazing cook, she is super fun and always makes me smile, and shares my love of beets and gnocchi.

My Vegan Lunch recipe (mushroom, polenta, kale)

Lunch this week

Earlier this week I made a video on how to prep kale.  I started  eating kale last summer when it came in my CSA box and to be honest . . . it took me a while to embrace the flavor and texture.  I know that it is so healthy for me to eat but still . . .

Do you have trouble eating things that are good for you?  I do.  Even as a Vegan . . . potato chips are vegan.  No matter what “diet” I’ve ever tried–I could always find a way to “cheat”.  But now that I have eliminated animal products, milk and eggs–I feel better and have more energy.  It has been a mental shift from meat-vegetarian-vegan and it has been a physical shift as well.  It works for me.  It doesn’t work for my husband (yet ;-)).  I honor and respect each individuals way of eating within my family and outside of my family.  Whoa, I started to ramble!

Top 10 After School Snacks (#4 is my favorite)

When I have kids in “school” I pick them up and bring them home–no bus service–so I like to have snack on the table when they come home.  If it is a year that I am homeschooling than we usually end our day with a snack and tea or juice from our juicer!

These are my top ten after school snacks:

  1. Leftovers from their lunch box!
  2. Veggies and Dip
  3. Apples and yogurt or another dip they like
  4. Pretzels with either mustard or chocolate dipped
  5. Cheese and crackers–I use cookie cutters to make flowers with the cheese–too cute–sometimes I even put a raisin in the middle of the flower!
  6. Celery and cream cheese
  7. Build your own nachos
  8. Mini cheese tortillas
  9. Muffins (just out of the oven before I go and pick them up)
  10. Cookies and milk!

I find that the kids like to do a little “food network” and build their own things as much as when I have it ready, so I like to mix it up a little bit.

If I have a later dinner because of practice or other commitments I start the crock pot at 3 for dinners to be ready at 7. 

TIP:  I also set the table before I leave.  When I come home I just need to plop the crock pot on the table, and by the time everyone is finished washing their hands dinner is ready!
