What’s in my Fridge?

What’s in my fridge?

Dirt.  Like real dirt from the veggies.  Probably a rogue carrot that fell behind the crisper drawer.  A couple of times a year I clean everything out, check dates, clean the shelves and put back what I know I will use.  Then I vow to never again buy the Ginger/Soy/Pineapple Marinade that was horrible.  (Honestly, why do I keep buying stuff that I know won’t be nearly as good as my own ginger, soy, pineapple marinade?)

What’s REALLY in my fridge!

I am asked all.the.time. “what is in your fridge?”

Yes, dirt is always my first answer.  Apples is my second.  Did you know you can store apples in the fridge for something crazy like 6 months?  That is what the lady at the farmers market said!  We eat 5 pounds of apples a week–I keep them in the bottom drawer for lunches and snacking.  What else is in my fridge?

  • lots and lots of salad blends.  I buy what looks best–conventional or organic and hopefully it will be on sale.
  • romaine–the turtles love romaine and so do the kids.
  • greens–like spinach and kale
  • carrots–from my CSA, farmers market and the grocery store
  • cabbage–I store them in the fridge.  I still have two from my CSA in October.
  • celery
  • celery root (celeriac)
  • broccoli
  • peppers
  • lemons
  • limes

What do I make with all of that?

  • stir fry with noodles and rice
  • mexican style foods–tacos, burritos, bowls
  • soups!!!  I love soup.
  • salads–leafy greens, cooked salads, slaws . . .
  • simple side dishes like vegan mashed potatoes, baked sweet potatoes

What’s on my counter?

You know I LOVE my onions.  I always have onions, garlic, ginger and bananas in a bowl on my counter.

Blab Cooking Show–Vegan Chili!

Vegan Chili

I can’t tell you how excited I am to be with Chef Dennis making vegan chili!  I love talking about food and making it insanely simple with tons of options.  OR, full disclosure . . . I never really make the same thing twice, I love the variety of changing out veggies AND how the veggies change flavor over the course of the growing season.

Save Recipe

Ingredients

  • 1 Jar Frontera Grill White Bean Chili Starter
  • 1 can Northern Beans
  • 1 cup carrots
  • 1 cup celery
  • 1 cup onions
  • 1 cup of peppers
  • 1 carton of vegetable broth

Instructions

  1. Cut all the veggies.
  2. Sautè the veggies in a small bit of olive oil. (I used my crockpot that has a sauté feature or use a stock pot.
  3. As they begin to cook down, add a little broth to sauté/steam the veggies.
  4. Add beans.
  5. Add Frontera Chili Starter
  6. Pour the broth into the jar and shake, making sure you get all the wonderful goodness left in the jar.
  7. All the remaining broth to the soup. Let simmer until all the veggies are as soft and wonderful as you want them to be!

5 Lunch Box L.O.V.E. Notes #8 (find your groove)

Monday of this week I was out of town with my youngest.  I was so proud of myself for getting their lunch boxes together before I left–including love notes.  What can I say?  I’m a planner!  We left Sunday morning after a long day Saturday . . . the day of homecoming!  I have a son and it was stressful . . . I can’t imagine having a girl.  A busy weekend can lead to a stressful week of the kids not feeling like they are in the flow.

Get your Groove

I often talk to people about finding their own groove.  Finding your own groove is important and realizing that the groove will change as soon as it starts to feel good.  I hate that part!!  Some weeks we can’t “get in the groove” until Wednesday or Thursday and then it just seems late . . . but better late than never.  BECAUSE, when you are in the groove, even for the shortest bit of time, that resets your whole mind.  (ok, maybe not your whole mind!) When we have that moment of “I’ve got this.” or that feeling of a  huge exhale . . . in that moment we can move forward renewed and refreshed.

How to find your Groove

We can find our groove by being mindful.  Ask yourself what works, what doesn’t work, what do I like, what do I dislike, what inspires me, what makes my heart sing?  Daily affirmations, love notes, moments of intention thinking . . . that’s when we figure out what makes us feel groovy when we are in the groove.

This week’s love notes will instill a sense of joy as we figure out what makes us feel groovy.

  1. I am beginning to understand that my actions impact those around me.
  2. I can fill my mind with loving thoughts by reading or sitting in nature.
  3. I will smile 5 times at 5 different people and send them positive energy.
  4. My prayer is . . .  (I’m amazed at what kids come up with.)
  5. I feel best when I  . . .  I feel bad when I . . . (let the kids come up with their own level of awareness on how they are feeling.)

My style of parenting is based on being gentle, loving, kind and respectful–I’m also strict and have high expectations.  It’s a balance.

What’s for lunch?

Wondering what to pack for lunch?  Well . . . I’ve been posting the kids lunches on Instagram.  I shoot for healthy but it’s also very real!
