Vegan Potato Soup

I make the most amazing vegan potato soup ever!  I just do.  In my younger days as a deli goddess, this soup was a huge hit!  What I noticed was if I didn’t add meat, it was still a hit.  What I also noticed is that my profit margin was greater without the additional cost of meat.  Win-Win.  In my own home this soup has evolved from making homemade stock with a ham bone to the version you see on the video below.

 In this show . . .

I really make two different soups.  The first soup is my soup–I love potato soup with celeriac or celery root.  The second soup is almost the same but it has chunks of carrots and celery vs. the celery root–the flavor is a little more intense with the celery root.  The other small difference is my soup has more garlic :-)!

  • This recipe lends itself to switching out peppers for yellow and green zucchini.
  • Adding brown rice adds a hearty touch to this recipe.
  • Try roasting the carrots instead of sautéing them.
  • Switch out leeks for the onions.
  • Top with mango salsa.

Phish Phriday/Fish Friday (Vegan Lunch)

Growing up I ate hot lunch at school every day.  Fish Friday was one of my favorite lunches!  Now that I think about it, that is probably why Lent is one of my favorite seasons . . .

This vegan lunch reminds me of the old days.

The food in the 70’s was awesome, homemade, and made with love from the most talented women in our small town . . . it wasn’t exactly a town.  Willis, Michigan was more like a spot in the road.  It is a nowhere place perfect for dreaming big dreams.

The lunch ladies loved me!  I always made sure that I went back and told them what I really loved about their cooking.  I was for real–not shmoozing.  They cooked things my mom could never have cooked.  Over time, they began giving me exactly what I liked.  For instance they NEVER EVER gave me green beans.  They knew I hated picking them and eating them.  Sometimes when I’m feeling a bit nostalgic I make these fish sticks for lunch.

Vegan Fish Sticks with Avocado spread and a Mixed Green Salad with dried blueberries, almonds, and a basil/blueberry dressing.  So good!

I said a little prayer for those lunch ladies.  I’m sure most of them have passed but the love they showed still lives in my heart.  That was a lesson to me–long after I die, I want people to remember the love I put into everything I do.

Monday of this week I was out of town with my youngest.  I was so proud of myself for getting their lunch boxes together before I left–including love notes.  What can I say?  I’m a planner!  We left Sunday morning after a long day Saturday . . . the day of homecoming!  I have a son and it was stressful . . . I can’t imagine having a girl.  A busy weekend can lead to a stressful week of the kids not feeling like they are in the flow.

Get your Groove

I often talk to people about finding their own groove.  Finding your own groove is important and realizing that the groove will change as soon as it starts to feel good.  I hate that part!!  Some weeks we can’t “get in the groove” until Wednesday or Thursday and then it just seems late . . . but better late than never.  BECAUSE, when you are in the groove, even for the shortest bit of time, that resets your whole mind.  (ok, maybe not your whole mind!) When we have that moment of “I’ve got this.” or that feeling of a  huge exhale . . . in that moment we can move forward renewed and refreshed.

How to find your Groove

We can find our groove by being mindful.  Ask yourself what works, what doesn’t work, what do I like, what do I dislike, what inspires me, what makes my heart sing?  Daily affirmations, love notes, moments of intention thinking . . . that’s when we figure out what makes us feel groovy when we are in the groove.

This week’s love notes will instill a sense of joy as we figure out what makes us feel groovy.

  1. I am beginning to understand that my actions impact those around me.
  2. I can fill my mind with loving thoughts by reading or sitting in nature.
  3. I will smile 5 times at 5 different people and send them positive energy.
  4. My prayer is . . .  (I’m amazed at what kids come up with.)
  5. I feel best when I  . . .  I feel bad when I . . . (let the kids come up with their own level of awareness on how they are feeling.)

My style of parenting is based on being gentle, loving, kind and respectful–I’m also strict and have high expectations.  It’s a balance.
